"On Mondays and also in the middays you can find an open restaurant with a sophisticated kitchen that is not such a simple undertaking – even in the city of Cologne. I just want to take a lunch menu. When searching on the internet I encounter the Hanse Stube at the "Excelsior Hotel Ernst". I am thrilled with “taku” in the same house – but on Monday it has. The restaurant is described as classical French on the website. The pictures look very pompous to me. The self-explanatory statement: “The good Stube Kölns. At the award-winning gourmet restaurant, the Hanse Stube, you will experience culinary star lessons. The dedicated team creates innovative French cuisine with local influences, whose finesse is well known beyond the city boundaries.” The “Kölner Stadtanzeiger” writes “Ambiente beats taste” in March 2014 and does not really praise the kitchen. But the author also visited the restaurant in the evening. “Michelin” reports: “The Hanse Stube is one of the most elegant restaurants in the city and offers good classic cuisine. Many business people come to the fairly calculated daily changing business lunch.” The “GaultMillau” punishes the local even more: Since 2012, it is no longer managed. So I am more than curious about the visit. Do I have a tie? The hotel is located directly on the Cathedral and Central Station. The arrival is hardly better for me by public transport. When you get by car, you can park it safely in the hotel garage; otherwise there is only a place near the cathedral in car parks. The company Graf Pilati designed the premises of the Hanse Stube. Mahagonic panels on ceiling and walls shape the style; but it is refreshed by bright seating areas and large windows in the courtyard. Furthermore, the bright table cloths and the light design contribute to the overall impression. Carpets and curtains ensure that the acoustics are also correct and not every word is listened to the neighboring tables. I like this kind that reminds me of movies in English colonial style (Sir Toby: No one believes that again when I tell you this at the club today. The table decoration was then relatively simple: the cutlery, the bread plate, a flower and pepper and salt shaker. On the bright cover of the bench were some smaller “flaps” which I only noticed because they did not fit the pattern. The fabric napkin was clean, but had a small crack on the edge, which did not bother me, but actually did not match the noble overall picture (which may be small, but at the high demands of the house to notice. Cleanliness The house was perfectly well maintained. Crumbs on the table are removed immediately before dessert. The sanitary facilities are not far away; but you have to climb stairs. The room is large enough to not feel cramped. The cabins also have a pleasant cut. Service I enter the restaurant and immediately the restaurant manager comes to me and accompanies me to the reserved place. Of course, the wardrobe was also supplied and kept. The card will be taken immediately. Sommelier asks for drinks. In total, four forces take care of the guests today. In addition to the head, a sommelier and two young people (a gentleman and a lady). The wine advice is excellent and a small chat to the plants is also obtained. Shortly before the walk, the restaurant manager also asks whether “medium” would be correct, he would have announced it in the kitchen; that was still good. My “incompatibilities” were also taken into account – and only with the little sweet farewell greetings I had to ask for the ingredients again and received appropriate answers. The menu also offers a wide range of services: a menu, day offers and a la carte. I choose the Excelsior Lunch. I find it very pleasing that bread, greeting and petit fours are also served to the three courses (38,00€ . The bread is warm and freshly baked. The waiter tells me they buy their baked goods as blanks (Fresh paradises. There are several varieties in the shell. I especially liked the grain variations. Four bread spreads are served. The consistency is partly blissful when cutting. The salted butter was delicious for me. Greeting from the kitchen follows on the foot. A delicious slice of salmon filled with fine herbs and beautifully decorated. I begin to enjoy; especially because the wine is already ready. Raw-marin tuna with corenadermayonnaise and wild herbs The tuna is perfectly tasted. It can easily be cut and spread in the mouth a full aroma. The salad consists of various different varieties. The dressing also convinces me. At least the small crusty piece of bread could be replaced by small croutons. Small steak from the entrecote with wild broccoli and roast potatoes The meat is kernel in taste and has character in bite. It is medium prepared. The vegetables of wild broccoli in combination with tomato pieces and pine nuts have tasted very well. The cooking point of the cabbage was excellent. Bread potatoes well made I love very much. These were just as I wish them: crispy inside out. The dessert should always be a highlight and today it was intended for me. The fruit pieces and ice cream crowned the broil that had a crisp sugar finish and was supple and creamy underneath. I appreciate this dessert, but sometimes I find it boring. Today I was thrilled. I hadn't cleaned up the last bites, so some pretty Petit fours came out. In addition to the three books, a selection of chocolates was offered to me. Something sweet still goes with me and so I was happy about it – especially since it wasn't tied to a coffee. But I still enjoyed an espresso. Beverages Corell Grauburgunder 2013 (8,00€ 0.1l – light and fresh very good to fish dishes. Chateau Fourcas Dupré (10,00€ 0.1l – from 2003’s year of sunshine, Doisy Daene 2000 (13.50€ 0.1l) – its pleasant and finely balanced sweetness has easily adapted to dessert. Gerosteiner medium (6.50€ 0.5l double espresso (5.20€) The wines were pure and a joy to the court. The costing in relation to the price in the specialist business is, however, chosen extremely cheaply for the restaurant (the triple price is quite common in the hotel industry – here it is already a whole lot higher. This is for lunch. (1 – certainly not again, 2 – hardly again, 3 – if it results again, 4 – happy again, 5 – absolutely again – after “Kuechenreise”"

"I choosed this restaurant together with my boyfriend to celebrate his first time in Germany - country that I love. I wanted something fresh and refined, with a hint of traditional flavors but yet under a new and creative form. This place fitted perfectly all my expectations; we had a lovely dinner here, with super interesting dishes and mixed flavors, surrounded by a relaxed atmosphere and friendly and skilled staff. The restaurant is rather small but comfortable, despite the small place and tables. Menu is blind: you can choose how many dishes you would like to taste, but you won't know what you're going to eat till you get them; this is an expedient I usually love -being a curious person first of all - mostly because it's the best way to understand the chef's opinion on cousine and tastes. We got the 7 courses menu plus some extras from the kitchen, everything accompanied by two really different but equally excellent riesling from the Mosel valley.Service was relaxed but perfect; the staff is well prepared and took good care of us, explaining all the dishes in English and giving us adivices - on wine, food pairng and also the subway (sigh, my bf and me got lost couple of times because of google maps and we loughed upon this all together).Bread is homemade and tasted delicious; it is served together with creamy butter with salt crystals. Among all the courses only one was - in my opinion - slightly out of balance (was a main with shrimps and I would have liked more sweetness, but that's it) all the rest was absolutely interesting, stunning and delicious - this guys knows what they're donig! My favourite was the last main with the veal: wow - these three letters are enough. If I think about the dinner alltogether I can say for sure it was an amazing experience; fresh tastes, sweet and sour contrasts and bright ideas about traditional German ingredients. In the end we've also been given tasty homemade candies to take with us - lovely gift. Gotta eat here... it's quite expensive 100% worthy!"

"This inexpensive, neighborhood restaurant/pub is just a couple of blocks away from an area with many restaurants that have higher prices and less exciting food. We were drawn into the place when we walked by as an older couple were walking out with a dog on a leash. Inside, nearly every table was filled with families or groups of friends who seemed to be on a first name basis with the staff. A super friendly waitress kept circulating with a carrier holding traditional, narrow glasses of beer which she dropped off for patrons as needed. We were too late to order pork chops; they had sold out earlier. So, I ordered a steak and my companion ordered pork cutlets. Both dishes were served with an excellent green salad lightly dressed with a delightful homemade vinaigrette. The main dishes included incredibly tasty caramelized onions and the best tasting potatoes I've ever had. I've cut way back on carbs and had only planned to have a taste of the huge pile of potatoes, but I ended up eating all of them because they were so wonderful. My steak, although a bit chewy, was cooked perfectly and tasted great.I travel frequently and I'm always on the lookout for good, simple, local food. This place is the real deal. I'm pretty sure we were the only people in the restaurant who were not from the neighborhood. For business travelers, it's within a short walk of Koelnmesse and the Hotel Dorint. I'll certainly be back again, perhaps this evening."

"At the end of a meeting in Cologne, we (a colleague and I still wanted to take a step forward and talk about the results and the course. From the reports of acquaintances and recommendations on the Internet, the choice was made for hare: no star food but good Mediterranean cuisine accompanied by suitable wines: and that is exactly what we have received. Many employees in the area of the local are also happy to go here at noon. We were there in the early evening. “Hase” is located in the city centre on a small street. The restaurant is located in the entrance area of the Ehrenstraße. An area with many shops and restaurants. In the outdoor area you can also sit next to the footpath. With great heat, the disk can be moved or opened in the inlet region for ventilation. The whole place is heavily oriented towards a French bistro. Many details are inspired with great love. Operation The waiter was friendly and expert. He introduced us the open wines and gave information to the eagle fish. He regularly asked about our wishes without being intrusive. The food When the house is full, it will also be a little loud. In good weather you can also sit outside. We arrived early in the evening and it was still relatively empty – but that changed abruptly by 8:00. The weekly card was placed on a clamping board, the daily offer was placed on a mobile board. Vegetarian dishes were also included. The service was friendly and expert all the time. We immediately got our drinks and then decided for the 3-course. Menu – we wish you vitrified wines and water. We were served bread (light and dark – fresh and tasty with a pot of paint and served on request. There was no greeting from the kitchen. The first gang was called “Carpaccio”: On beef were black roots, rocket, a croquette stem and a fine sauce cream. I tasted the black root with the jus very well. A Chardonnay from Germany was given this (he matched the court, but did not make a lasting impression on me. The fillet was fried on the skin (cracked skin tasty, fish meat finely cooked. The ingredients harmonized. The wine was excellent: Sancerre (Loire area, Sauvignon Blanc grape variety. The dessert came under the name “Zitronentarte”: Besides this cake there were plums and lemon ice cream. The ice was too sour to me personally, but the tart was much more exuberant in the aromas, and the plums have particularly boiled to me. They had been cooked in a tasty liquid and still not so soft. So the dessert was a successful trilogy. There were “Muscat de Venise” (Rhone region; a sweet wine belonging to the genus of the “Vin Doux Naturel”. By adding pure alcohol during the early fermentation phase, the process is stopped and the natural grape sweets are obtained. About 15 percent. The wine had enough sweetness for the dish, but it was a bit sprinkle in the finish. The menu was served quickly and had no great breaks (the waiter asked if the next walk was already desired. Overall, a successful dinner at reasonable prices (about 55 euros per person with wine tasting); Many guests also drank “Kölsch” for food – it does not have to be “euer” at all. The ambience Small tables with chairs immediately fall into the eye. There are no tablecloths on the tables. Pleasant are the simple fabric napkins. Art-Deco-style decorations and inspired French diocese are impressive. Stainless steel cutlery is ready for use. Cleanliness The place is well maintained and clean. Sanitation Everything impeccable. The toilet is automatically cleaned chemically and thus extremely hygienic. Conclusion 3 – if it results, happy again (1 – certainly not again, 2 – hardly again, 3 – if it results again, 4 – happy again, 5 – absolutely again – after “Kuechenreise” 18.10.2013"
