"Having visited numerous Michelin-starred restaurants, I’ve become uncertain about Michelin’s standards. There’s a lack of consistency due to the significant differences in criteria from country to country. For example, here, the terrace is next to a dirty river, and bulldozers noisily run across a road spanning the river. As for the food, the locally sourced ROJOS shrimp in the paella were indeed fresh and delicious. However, the other mussels, shrimp used for broth, and fish were excessively salty. The paella rice was supposed to be infused with flavor, but there were off-flavors mixed in that made it impossible to enjoy the taste. The service staff was too few for the number of customers, making me feel sorry for them. It’s clear that there’s a significant difference in the quality of one Michelin star worldwide. While many restaurants have worked hard to earn even a single star, customers must also be diligent in choosing where to dine."
