"I was impressed on many levels. The first has to be its location, situated in the tiny village of Ambres some kilometres from Lavaur, and definitely worth the drive. Compared to other restaurants in the area, Chez John feels different, even from the outside. The first impression upon entering is one of contemporary elegance, a city style rather than rural charm, with widely spaced tables and delightful modern cutlery and glasses. The lighting isn't harsh, the decor works perfectly, and a warm welcome only adds to the ambience. Now I've eaten in a number of restaurants where all this can feel pretentious, but the proof of the pudding is in the eating so to speak, and here Chez John doesn't disappoint. The menu is small but well balanced and using the freshest locally sourced ingredients. The dishes are assembled with great attention to detail, the flavours are harmonious, and everything cooked to perfection. The wine list isn't extensive but cover most tastes and aren't overly expensive, favouring several from the local wine-growing area of Gaillac. The plates aren't copious but you wouldn't expect them to be for a restaurant of this kind. What you do get is quality and a memorable dining experience, where good food and service set Chez John apart. Definitely worth a visit."

The whole meal was brilliantly flavoured and balanced and the service was first class. I particularly enjoyed the fraicheur with quails eggs, venegrass and bacon ice-cream. A great experience and I will be back.

We had a very good dinner experience Chez John. Fine dining with a menu kept short with fresh produces and inventive dishes.The menus are changing often and the first one at 30 euros is good value for the level of cuisine (starter, main, cheese and dessert + amuse bouche).Probably the best option for a nice meal in the area around Lavaur.

Another wonderful evening at this impressive restaurant, gaining in popularity. Every dish is a work of art, even the amuse-bouches are original and lovingly done, and the welcome is always warm. We were there for a birthday meal in July, the menu at 30 euros is a gastronomic treat: appetiser, hors d’oeuvres (delectable fresh crab concoction), main course, cheese and dessert - and the price of the wines won’t leave you bankrupt… Ver carta

A welcome addition to the choice of eateries in the Lavaur area and beyond. Good on John who despite the onerous official requirements to set up a restaurant these days, persisted with his dream. The restaurant itself is modern in decor / fittings and needs to " wear in " but with the addition of an outside area this summer will be right up there. Interestingly different twists on fresh local produce makes this a most pleasant experience.

We had heard about this restaurant from various people and finally got around to going this week. Why have we not been before? it is brilliant. The chef has a light touch, a great sense of taste and the menu is good. It wasn't terribly busy when we went - midweek - but the waitress made sure she talked to all the diners and advised them well. The Mancunian chef was more than happy to talk to his guests and explain the sources of his food. The restaurant itself lacks a bit of ambiance, possibly because it is still relatively new and so settling down, but at least it doesn't impose music, thank goodness. All in all, a great evening out.

Friends of ours recommended this restaurant and being in something of a gastronomic desert in the Tarn we made the journey for lunch. Quelle surprise! Undoubtedly one of the best meals we have had in the 10 years we have lived here.Starting with smoked haddock soup packed with flavour we followed with the dish of the day - biche (venison). Two generous slices of fillet topped by a thin slice of liver with a hint of a citrusy sauce surrounded by vegetables. The biche was cooked to perfection and was tender and succulent. To finish "Autour de cacao" chocolate heaven.To summarise the meal was better than many we have had in Michelin starred restaurants. Ver carta

Went to Chez John on the recommendation of friends for a birthday lunch. We were not disappointed! The menu du jour looked interesting but we had the menu decouvert, more expensive but with more choice. For me, the highlight was the cooking of the piece of cod - it was cooked to perfection, the trademark of a chef who really knows his business. The rest of the meal met our expectations and the quality was up to the price so I have no hesitation in recommending Chez John as an up and coming restaurant that will surely figure well in Gault Milllau and Michelin guides. Not to detract from what is above, but to express a personal preference, my cup would have overflowed had the skin of the cod b...

Having once lived, part time, in the Tarn for ten years, my husband and I were always on the lookout for new dining experiences during our visits. Returning this year for a holiday we were very pleased to discover Chez John and although it's a little off the beaten track, it's well worth the drive. Modern and chic, the restaurant is spacious and airy with the addition of a seating area for an aperitif, something most French restaurants don't offer. The menus are well thought out and delivered on all counts. Beautifully presented, amazing tastes and flavours....and hot plates! Another thing the French don't always get right.
