Primi: cheek paste, potato cream and pecorino very good, also excellent, but too much, too much fat remained in the dish; ricotta plin and spinach good but nothing of that. Second: boiled to the cart. Good, but missing the cart and above all it didn't seem just done. I understand, we were only at lunch, but nothing exciting. sublime culinary experience in a restaurant that enjoys excellent reputation and shows you deserve everything. we started with a fried of sweet and salty brains, for nothing greased, and with fried yolk on fondues with porcini and truffle, made to perfection. also the cannelloni alla checco. but the protagonist of the lunch was the big boiled cart mixed. great class dish, served and illustrated with love and attention to detail.
