"I was really impressed by the deco, which is at the same time noble and purist, as the Nordic countries like. our table had a breathtaking view of the elbe with sailboats and commercial ships, but I really concentrated on the taste of the individual dishes. everything revolves more about quality products than techniques such as molecular food, even with tradition and modern, as they expect from a great chef. thomas martin says that it is important what they see, what they get, and that they need to feel the taste of each ingredient, and it is really what it is, a first-class French gastronomic experience in a modern Nordic style, and it was an unforgettable lunch. my 5-course lunch began with a beautiful appetizer, among them first-class homemade pommes, satin with salt, fresher sawn with citrus fruits and white rettich as well as salmon caviar. fresh and light. the sommeliers choose for us a wonderfully discreet mineral German giant from old barrels that they find only at jacob. it was really appropriate for all the dishes we had. the first court was really a local feeling: salmon trout with ingwer, apple, staudensellerie, dill and rettich. it was delicate and fresh with the spirit of the local kitchen on French gastronomic wise. the second was more surprising: the famous French woofer soup was reopened and was really top in comparison to a woof soup that a French star chef had done in her suppe menu. the third was grilled makerel with tomatenmarmelade, couscous, Greek yogurt, very nice in the presentation, but less tasty than expected in the combination of the ingredients and with a lack of crispy, even if it was a Star Chef dishes. the fourth was the fried rucksack in a spicy coat with champignons, kirschen, kohlrabi, pomme dauphine. it was a jewel that tells me that thomas martin is at the level of the French 3 stars in the michelin and a cult chef in Germany. for the dessert, strawberry, Baiser-Champagner, the sommelier has again made a great choice, a German sweet wine but far more subtle than a muscat, not far from the legendary château d’yquem. this amazing taste of this German wine is due to the fact that the grape harvest is very late. unfortunately this must be for wine lovers exklusiw in restaurant jacob. it was a great moment for gourmets and an experience in hamburg, even if they have to book far ahead, as the locals appreciate this restaurant."
