"As a professional chef I had the privilege of spending an afternoon and evening cooking with the extremely talented Chef/owner of La Locanda Bagnara. Chef Mirko, formerly the Executive Chef at the famous Quisisana Hotel in Capri, uses only the freshest seasonal ingredients and adapts his menu daily to showcase these items. When I visited we cooked no less than 15 different varieties of fish, hand picked by Chef Mirko himself at the fish market in Ravenna. Chef Mirko's passion for cooking shines through in every dish he creates- his philosophy is to use the best ingredients and let them speak for themselves without masking their flavours with cream, butter or strong sauces. Instead he compliments their flavours with fresh herbs, extra virgin olive oil and unobstructed vegetable purees and reductions. In a country where not much emphasis is placed on presentation (because everything looks and tastes so good anyway) Chef Mirko takes pride in making beautiful plates and likes to play with different textures and colours which further enhance his delicious dishes. Following my informative experience Chef Mirko treated me to a divine seafood tasting menu accompanied by a great selection of local wines from his extensive cellar. La Locanda Bagnara is situated in a historic building on the square in the picturesque village of Bagnara di Romagna and is definitely worth the trip if you're in the region. It's good enough to be a destination restaurant and in case you have too much wine, you can always stay over because there are a few rooms available upstairs!"
