"There was a time a few years back when L’Emulsion was not my favourite restaurant. At that time there was far too much ‘espuma’ foam for my liking even though this was kind of self evident from the name. All that changed last night when we had a splendid four course meal at €56 per person accompanied by an excellent Condrieu which I noticed had barely a two fold mark up on the standard retail price. The novelty value of the food is there, for example, in the entrée the juxtaposition between foie gras, green vegetable bed and cardamom sauce was surprising; The veal and accompaniment worked together splendidly and everything was cooked to a T; The deliciously concentrated flavours of chocolate and coffee in the desert or in the case of my wife’s desert the mix of aromatic citrus extracts, were all the demonstration that this restaurant has not had its last word in terms of inventiveness, imagination and simply great cuisine. Yes there’s a little work to be done in terms of their service and the visual impression of the end game but hey, it’s just got the one Macaron for now. It’s amazing just how much progress they’ve made over the last years. I’m pretty sure L’Emulsion can get a second one. Just for the record, as I noticed that in some previous comments customers were apparently told off for being 10 minutes late, we too were 10 minutes late but nobody mentioned it except ourselves. We’ll definitely be going back."
