"Last night, I had the pleasure of dining at Etch by Steven Edwards in Brighton, and I can confidently say it was one of the most memorable meals I’ve had in recent memory. From the moment we walked in, the ambiance was warm and inviting, with modern yet comfortable décor that set the tone for a truly elevated dining experience. The menu, a celebration of seasonal ingredients and innovative cooking techniques, offered a delightful blend of creativity and finesse. Each dish was expertly crafted, balancing bold flavors with delicate textures. Standout moments included the scallops cooked to perfect and the marmite infused bread, where the precision in cooking was evident in every bite. The use of locally sourced produce added a fresh, vibrant touch to each course, and the presentation was nothing short of stunning. Service was attentive without being intrusive, with staff offering knowledgeable recommendations and explaining the inspiration behind each dish. The wine pairings, too, were thoughtfully chosen, complementing the flavors of the meal beautifully. What impressed me most, however, was how Etch manages to combine a fine dining experience with a relaxed atmosphere, making it the perfect spot for both special occasions and casual indulgence. In short, Steven Edwards has created a restaurant that not only excels in flavor but also offers an experience that feels both personal and extraordinary. Highly recommended for anyone visiting Brighton who appreciates exceptional food and great service. "Sensational and surprising Gujarati feast. This restaurant is unique in that it serves taster menus for 'sharers ' like us and limits to groups of up to four but never more. So there are no rowdy crowds! We went as a couple for a special occasion and the delicious, unique, exciting dishes kept on coming. We had 6 small plates so that we could taste a little bit of everything and we hadn 't tasted any of it before anywhere else. It is great if you are Plant-based eaters! The restaurant is Vegetarian anyway by culture and so vegan food is simply a natural extension. So they serve family dishes that happen to be vegan and other dishes can be made vegan so it is super easy to be Plant Based. I loved everything about this imaginative, warm and convivial place and the food is sublime... especially the lemon pickle, the sesame potato patties and the aubergine and pea curry. The family stories behind this small one off independent restaurant are heart warming and inspiring and they really buck the trend of chains and formulas. The styling is gorgeous with nods to the traditional but not a pastiche and the atmosphere is special and romantic but not formal and devoid of pomposity and so it draws a nice crowd of food loving people having intimate dinners and appreciating the details. There is nothing this family has forgotten. Every detail matters. Great value, plentiful portions and genial, personal service. You will leave wanting to buy your family presents of their gorgeous chutneys and the soon to be published cook book and bring all of your fave people for a meal. We both left vowing that we 'll never eat anywhere else again."
