"It was not my intention to do this review, as I usually criticize her directly to the staff, but this time I had to inform myself as ignorant about certain schools of thought and respect for the philosophy behind a job like the chef, but what happened to me has quite shaken and it is right that future customers know what the aspects are. we have been to eat Saturday evening 29/01/2022 (this is important to report it for the reason you will see below.) pro: enviable location, both in summer in the court and in winter inside the fortress (as inside the fortress places are very few is recommended to book) family conduction mother-daughter, you can say that you can feel at home martin is genius in the kitchen, manages with few ingredients to make good things I didn't understand the reason, but then I was explained that the master gualtiero Marchesi (of which martin was a student) in his premises don't need sparkling water I informed myself, and it's not exactly like this... the master wine did not like and preferred for the most complex dishes that used water (this doesn't mean that it only serves natural water) as the menu changes every day, it is not possible to evaluate prepared dishes if not on the moment rather than changing the menu every day, maybe changing it every 3 months helps just the seasonality and maybe you create the possibility to propose signature dishes (i.e. dishes that I go there because it makes them martin in that particular way the sparkling water would be appreciated. I hope my review is not seen as a complaint but as a recommendation."

beautiful location that we happened by chance pure manager was super exquisite and despite the exercise was closed we served cured wines and cheese and was extremely excellent for the great availability. Big rich.

A wonderful place with a magical atmosphere. The menu is short, but thanks to this the food is fresh and excellent. A very large selection of wines, also by glass. You can sit and enjoy the meal and views all evening long. Very nice and helpful people serve guests. I highly recommend this place. Ver carta

Entering the place so it simply means to feel at home, with the value of being able to taste flavors at km0. I really dreamed of eating gorgonzola croutons, nuts and pears. A cutter of meats and cheeses of the territory, accompanied by gratinated contours, completed my dinner tonight. By chance I came across this delicious restaurant. The welcome was superb, Riccardo and Anna know how to put you at ease by showing off their priceless courtesy and professionalism. The courses are generous, tasty and refined, the fresh ingredients coming from free-range farms in the nearby valley are absolutely delicious and genuine, which is rare nowadays. The characteristic, intimate venue with a pleasant background of refined music hosts few seats inside, but externally has a lot of space overlooking the enchanting valley. I was expecting a classic restaurant and instead I was catapulted in a wonderful grottino where vintage is a mistress. chairs different tables, dishes like those that my grandmother had. a philosophy different from the stereotypes of the classic restaurant. but the beauty still has to come. after a very good velvet comes the first dish. maltagliati con fave curcuma...a delight, arista cooked in a particular way, potatoes presented in threaded in the skewer that gave that touch of beauty and originality to the dish. dulcis at the bottom a taste of prepared and carefully carried pastries. and particular digestives but very sought after and really great! Very pleasant discovery in the upper part of Fossombrone. The climb on foot was amply rewarded. Tables in the garden with a terrace overlooking the village, the atmosphere is already pleasant. It's difficult to recommend the dishes, given that they change almost daily from what I understand, a restaurant that prefers to focus on a few choices on the menu based on seasonality done well.
