"as I would like to invite business friends here in the region (Ortenau/Breisgau) to eat, I have sought a locality that is considered to be top-class and enjoys a good call. because noticeable is one of the few regional restaurant in this category that I do not yet know, we (my wife and I) spontaneously decided to try to one.Telled done....we were very nice and with handbeat received and brought by woman to the table. the tables are unfortunately very tight, so my wife with her chair constantly pushed to the table neighbor and hardly had freedom of movement. also the chair legs give a loud squeak on the floor of themselves during each movement. Due to the mutual proximity you get more of the conversation at the side table than that you could entertain yourself. because there were four guests sitting there, it was also correspondingly loud, especially since the background music was unfortunately also somewhat too intrusive.For aperitiw we were offered a (very good) winzersekt from the region, no alternatives. we then later noticed (openable to masters) that champagne is also given out - but perhaps it was also reserved or I should have asked.But it was about the kitchen. too much of the maid, in short: pickled pikes/skinned mushrooms (sweet preparation and good), hokkaidosuppet (good but not worldly), two kinds of the calf (very good, excellent meat, exactly at the point), imperial chairs chocolate (various desserts from and with chocolate, very good) the fish I have complained at the service, there was no reaction from the kitchen. Instead of the ordered cheese to finish (I had pointed out two times that no dessert to want to have) but then I got that dessert. that was exchanged quickly, the cheese cellar was modest, it was not explained what was on it - in retrospect, I would have taken that dessert better. but this may be a taste thing.The wine card is very well stocked, estimated >100 positions, of which approx. 90% regional, many plums (especially rieslinge), some good French, Italian, Spanish, besides South America, Austria. to the escape there were grayburgundy of heger (one of the best of the region), the rose I would have liked to have had to go to the main course was out (but still in the map), that is to say lateburgunder of salwey, after all the better choice.The service is endeavored, funny, but unfortunately talks somewhat more than appropriate. the chef, however, has taken over some of the serving (in the kitchen). for that there is little attention from the service (water you often have to reassure yourself, the serviette has fallen down, it has not been replaced). At the end of the expected bill, espresso and digestiw we have dispensed with, nevertheless stood at the end two espressi with it (I am unfortunately a bit sloppy and I have only briefly overflied the bill and the smoothly overlooked, my wife a few hours later). Price/performance is not really true here as a whole.When going there was neither chef nor chefin to see (we were almost the last, since I know from other houses the opposite nor much later in the evening more attention, especially with new guests), even the service did not know despite demand where the house owners were. so no chance to get rid of personal maneuver criticism again. Instead, we have thrown another look into the new "Pfarrgarten" restaurant: big praise to the homelords and the architects, which has become really beautiful.All in all: merkle’s is good, but not overwhelming, also in the 1* category. for that then there were mistakes in ordering, the fishing trips were over the point and the bill at the end wrong. the spatiality is beautifully decorated, unfortunately the guests sit too tight and it is relatiw loud. the music should be left completely or quieter, for squeaking chairs there are felt gliders. Overall, I am thinking of whether I don't redispose of eating in December."
