"Nous n’oublierons pas le plaisir que nous avons pris dans ce restaurant. l’accueil est aimable avec prise en charge vêtements à mettre au vestiaire la salle est belle, de style moderne épuré, de très bon goût, l’éclairage est sympa, les tables bien isolées les unes des autres. le personnel est très professionnel avec un regard attentif mais discret sur la table, il donne de très bonnes explications sur les différents mets servis. Le sommelier fournit de très bonnes explications sur chaque vin qui s’accorde très bien avec les différents plats. Des mises en bouches jusqu’au dessert, c’est un vrai festival de saveurs et une mise en scène visuelle des différent mets. L’ensemble constitue un repas finalement très copieux. Difficile de dire ce qu’on a préféré car les plats sont différents : dès les mises en bouche c’est le paradis avec à chaque fois plusieurs mets : saumon, œuf dans sa coquille… ensuite, nous avons eu droit à de la coquille Saint Jacques légèrement cuite ou en carpaccio, puis la langoustine accompagnée à merveille par une excellente sauce et de petits légumes. Enfin, nous avons dégusté de l’oignon cive mode tarte tatin généreusement accompagné de fine rondelles de truffe du Périgord : un vrai délice très original rarement servi au restaurant. Nous n’avions pris que trois plats mais nous avons eu des regrets quand nous avons vu, servi à une autre table, le quatrième : le pigeonneau, ce sera pour une prochaine fois ! Quant au fromage, Morbier et Comté affinés très goûteux, un vrai régal sans parler de la cancoillotte au vin jaune, inoubliable ! Les desserts d’Alexandre au nombre de trois, tous d’une grande originalité (dont un à base d’endive! , ont conclu cet excellent repas. Il faut saluer les excellents accords de ces plats avec les vins choisis par le sommelier. Cette description peut paraître dithyrambique mais elle correspond au plaisir que nous avons ressenti tout au long de ce repas. Avant de partir nous avons pu discuter avec le Chef, véritable artiste gastronomique, très ouvert et sympathique, heureux de savoir que nous avions passé un moment inoubliable dans son restaurant. Nous ne sommes pas à notre premier essai de restaurants étoilés. Nous sommes convaincus que celui ci mérite largement sa deuxième étoile Michelin en comparaison avec les autres restaurants que nous avons eu loisir de fréquenter."

"There are still hotels in France that offer what is unparalleled in the French hotel industry: A human, family-friendly size, rooms with incredible charm, excellent cuisine and high-quality services (sauna and massages). Of course, all this comes at a price, certainly rather high, but in the case of the Hôtel Frédéric Carrion, the rates charged are in line with the level offered. 1° Indeed, the hotel is admirably well decorated, with a certain taste for beauty and well-being. Your eyes will often stop on objects, corners “atmosphere” with class. The rooms are spacious, clean and quiet. They exude an immediate and quite unexpected charm. 2° The cuisine is very refined. The dishes offered explode in the mouth and combine new flavors that go perfectly with the wine offered. The service is provided with a smile and great attention to the well-being of guests. Yes, the prices of the wine list can surprise, even shock some customers (from €71 to...€600) but the choice is clearly to offer what is best in this register, at the risk of making a madness for well-filled purses!?! 3° The private sauna is clean and very pleasant. The hostess takes great care to make this moment exceptional, a bubble of sweetness and intimacy. 4° The massages are carried out with professionalism and efficiency. The small downside on this subject concerns the place which deserves to be more cozy in an establishment of this standard. Frédéric Carrion and his wife have undoubtedly made this old residence a beautiful place where it is really very pleasant to eat, sleep and relax. It is rare to find so many services of this quality in the same establishment. We can only be delighted to see the excellence of the French art of living perpetuated through their establishment!"

"Between Tournus and Mâcon, I enjoyed one of the last summer lunches even in the middle of October. Parking inside the property. A vast terrace adorned with contemporary works of art opening onto a green and wooded park. There is the background sound of the highway, but so weak, so attenuated that we completely forget it after a while. In fact the setting is just exceptional and conducive to daydreaming. Very profitable variation of menus on this day of the week for all hungers. Having “enjoyed” a lot of regional gastronomy the day before, I settled for the Menu Plaisir with its catchy name. Very original appetizer, and yet we know some... What delicate and precious cuisine where nothing protrudes higher than the other, both in the rabbit saddle tartlet and in the pikeperch with pea coulis... Discovery of the faitselle in its version with salt and pepper brought to the table. Pleasant, relatively light dessert. A detail that I rarely point out, the homemade bread (and therefore delicious was perfectly suited to my tastes: well toasted and few crumbs (that's how it is! . The glass of Champagne and the glass of Pouilly Fuissé were choice and notable. The service is relatively fast and knows how to adapt to the pace of the customers. Hotel not tested. An exceptional starred restaurant in the region."
