"We went for dinner on a quiet Saturday evening - table for 4, myself, my wife and two young teenagers. This was a treat for the last night of our holiday and it truly was just that. A memorable and highly enjoyable evening. We came away feeling as if we had visited friends, rather than a restaurant we were never been in before. The food was outstanding - everything we ordered was cooked and presented beautifully. The welcome and service throughout was very attentive and friendly - a charming waiter. and both Val and chef Paul made a point of giving us time to chat and talk about France and its wonderful food. All mains we ordered were slow cook dishes which melted off the fork, full of flavour. In addition to the starters ordered, they sent out 3 sets of different appetisers free of change to ensure we had plenty to nibble on while waiting for the order. The selection of cheeses on offer was huge with a big focus on local suppliers and producers which they make a point to support. The desserts on offer were many and varied and top class on portion size and taste. The wine list was great. The set menu pricing which we ordered from and included cheese board selection (as much as you would like to try) is really very good value. The atmosphere and setting is lovely - very warm, relaxing and not at all too formal. If you enjoy really good food, that you can eat at your ease in a beautiful setting, with friendly and attentive service, visit this gem of a restaurant. If you are coming for dinner, suggest you consider skipping lunch that day, you will eat well and come away full and content. Top class."

Paul and Val have my mothers 70. Birthday bbq... and it was brilliant... everything became... the food was delicious and plentiful. Very professional, but also friendly and flexible. Very recommended for outdoor use

Delicious food, the scallops and black pudding starter is an inspired dish, and the king prawns were awesome. The staff are very attentive and the table visits from Paul (the chef) are always entertaining. Many thanks for a special evening.

This is a second visit for us, as last time exceptional food, charming hosts and great atmosphere. Nothing is too much trouble including a lift home in the Bentley! thank you Paul and Val for another memorable evening, I hope to visit on many more...occasions. Ver carta

We felt as if we were part of a fawlty towers remake with Miguel playing Manuel and Paul playing Basil. What a laugh! And in between the parts lovely food is being served with a cheese platter we will not lightly forget! It's a pity we were just estivants otherwise we would become regulars!

What can I say...made me and my family so welcome for my daughter's 18th birthday celebration.Run by chef Paul and his lovely wife Val,it's gorgeous setting and out of this world food makes this a must to anyone visiting the area.Made a fantastic birthday cake which was to die for, the locally sourced cheeses that are presented before pudding....WOW accompanied with several glasses of port and brandy.Keep up the very high standard's Paul and valand thank you.

This was my first visit to Aux Quatre Saisons. I had only heard good things, but the food was even better than what I was expecting. I had the baked camembert with bacon, green beans, and potatoes delicious! For dessert I had the creme...brûlée, which was easily the best one I've had in a long time. I definitely recommend it! Paul and Val were incredibly welcoming, and I very much enjoyed learning about the traditional way to drink port from Paul. After a lot of research, and based on the (thoroughly deserved) excellent Tripadvisor reviews, we decided on Aux Quatre Saisons as the venue for our granddaughter Bethany's 18th birthday meal. We were so glad we did, as Paul, Val and Miiguel ensured it was a night to remember for all of us.The care and attention that is so rare nowadays began with their arranging for a truly scrumptious birthday cake (see gallery pic), and confirming our taxis to this beautifully situated location, which is about 20mins drive from Quillan along breathtaking roads - everyone wanted to be drinking on this special evening. So I reckon we all turn a little cynical and doubtful when tumbling upon a 40 x 5 star review on TripAdvisor. Too good to be true, no?No, this one is genuine. "Our friends and we wanted to sit outside in a beautiful environment and eat good food in a welcoming atmosphere, so we chose Le Bar Central. We always enjoy our time in this restaurant, but it was even better than normal. Our appetizers of salad... of gésiers and salad of roasted goat cheese on whole grain bread were absolutely delicious. The dressing on the salad was amazing and the whole was garnished with roasted pine nuts. Two of us chose the entrecôte that was declared to be cooked for perfection and beautifully seasoned. One had a magret de canard who was a very generous portion and again said to be cooked for perfection. One had Steak Haché, who looked fantastic and was again a big part. All were served with crispy freshly cooked frits and salad. It was all fantastic and none of us had room for dessert, but we saw the most amazing ice cream desserts served and wished we were still hungry. The service was excellent and the team made us very welcome. We were not rushed and despite the fact that other diners were turned away, we never felt we should go. We think it is necessary to make a reservation for lunch in this restaurant as it is an extremely popular place. This is restless as we have four appetizers and four main courses all cooked and presented, four aperitif, wine and beer for 25€ per head in addition to them offer a very attractive performance for our friends dog...so friendly.
